Following a 35 year culinary career that spanned four countries and countless five star hotels, Chef Mihy joined the Renaissance Las Vegas in 2007 to share his vision of excellence. Chef Mihy is a decorated, award winning chef and the creative visionary behind one of Las Vegas’ most loved steakhouses, ENVY. Known for his warmth and unwavering work ethic, Chef has chartered a distinguished and adventurous career.
In his dual role as Executive Chef and Food & Beverage, Chef focuses his passion in two directions: applying his global culinary experience to new Renaissance dining concepts and standards; and actively coaching his team to perform at the highest standards.
After graduating from University with two degrees in France, Chef Mihy launched himself into training. For six years, Chef Mihy sought out the most prestigious environments training with world renowned chefs spanning France and the United States in ten two and three Michelin star rated restaurants. His most notable instruction came from the “Chef of the Century” Joel Robuchon at the legendary Jamin in Paris.
What followed in the thirty years between Chef Mihy’s tenure in France and his arrival at the Renaissance Las Vegas is nothing short of remarkable. Chef spent six years overseeing banquets at the Las Vegas Hilton, which was at that time the largest hotel in the world, handling events for over 8,000 guests. Chef Mihy’s last two years at the Las Vegas Hilton were spent as the Executive Chef of Le Montrachet, a five diamond, five star establishment and a Bon Appetit “Restaurant of the Year”. After his time at the Las Vegas Hilton, Chef Mihy’s resume takes him from being an award winning restaurant owner, to the corporate chef for some of America’s Fortune 500 companies, to taking the helm at several four and five star restaurants as far away as the French West Indies and off the coast of Africa in Mauritius Island.
When it seemed Chef Mihy’s credentials could not go any further, he is not only a Certified International Executive Chef. Chef Mihy also belongs to the distinguished Les Toques Blanches, which has the most rigorous of barriers to entry.
When he’s not working, Chef Mihy is playing golf, coaching soccer, or planning his next ski trip. Chef also has a hidden talent – ice carving!
